my email notifications are not sounding over music as all others do

That could be how the email application is choosing to address audio focus. Apps can force their audio (make other apps audio quiet), or allow other apps to keep playing softer in the background. The email app may be more passive and not interrupt any current playing media.

SoundAbout can redirect media, but it can't change how it is played by the originating app.
